Cool and slow ferment over 14 days. Elevage taking place over 9 months with 20% on brand new Slovenian oak A toasty, savoury nose opens up after some air to show tropical and citrus aromas. Palate is generous with flavours of granny smith apple, supported by a bright acid line.
